Accuracy of the content

Recipes, ratios, timings and technique descriptions are published in good faith and checked against published sources, but kitchens differ. Freezer temperatures, tap water, fruit ripeness and equipment all vary, and a ratio that is correct in principle may need adjusting in your kitchen. Treat every number here as a well-founded starting point rather than a guarantee.

Kitchen safety and health

Nothing on this site is medical, nutritional or dietary advice, and no page makes a health claim. You are responsible for safe food handling, for the condition of ingredients you use, and for knowing your own allergies and those of anyone you serve. Follow the safety instructions supplied with any appliance you use, in preference to anything written here.
