The scenario

For a kitchen where the counter is already fully committed and there is no third of a meter to give up. A two-tier cart on wheels borrows floor space instead of counter space, and it can be pushed against a wall when the room needs to be a room again. The constraint is real, so the rule is one job per item.

Zone by zone

  1. Zone 01 — The top, kept clear

    Nothing permanent. A board or tray that lifts off, and the glass you are working on.

    On a cart the top shelf is the only real work surface you have. The moment it is used for storage, the cart becomes a shelf and you are back to building drinks on the counter you did not have.

  2. Zone 02 — The top rail

    The frother in its stand, the zester, and a towel over the cart’s handle.

    The two tools that get used on nearly every drink live at the working height, and the handle is free storage for the towel that would otherwise take up shelf.

  3. Zone 03 — The lower shelf, front

    Syrups, a small tin of matcha or cocoa, and a stack of four glasses.

    Front of the lower shelf is reachable without crouching. Everything you touch daily belongs in that band; everything else goes behind it.

  4. Zone 04 — The lower shelf, back

    Spare cups, an unopened bottle of soda water, the backup syrup.

    Deep storage on a cart is genuinely deep — you have to pull things out to reach it. That is fine for stock, and wrong for anything you need mid-drink.

  5. Zone 05 — The wall behind

    Deliberately nothing.

    The cart has to be able to roll out and back. Hanging anything on the wall behind it turns a movable station into a fixed one, and the whole point was that it moves.

Things people buy for this station that do not earn their space.

  • A third tier or a shelf riser. It puts the top shelf above comfortable working height and turns the cart into a bookcase you cannot build a drink on.
  • A full-size blender. It is the heaviest thing you could put on a rolling cart, it needs an outlet the cart cannot commit to, and it lives better in a cupboard and comes out twice a month.
  • Glass canisters for sugar and cocoa. Heavy, breakable, and on a cart that gets pushed against a wall, they are the things that chip. Sealed plastic or tin does the same job and survives the wall.
  • A stemware rack under the top shelf. It fixes your glassware choice permanently, uses the vertical space you need for the syrup bottles, and rattles every time the cart moves.

Keeping it usable

  • Clear the top shelf completely at the end of every session. A cart with a clear top gets used tomorrow; a cart with three things on it becomes storage within a fortnight.
  • Wipe the wheels monthly. They pick up whatever the kitchen floor has, and then they put it on the floor of every other room the cart visits.
  • Rotate the back of the lower shelf forward once a month so nothing sits opened and forgotten behind the things you use.
  • Keep syrups refrigerated once opened rather than on the cart, and check keeping times against the cold-storage guidance below instead of judging by look.
